Brisbane chef Adam Wolfers trained at Sydney game-changers Est and Marque before travelling for defining stages at Wylie Dufresne’s WD-50 in New York and Spain's three-Michelin-star Quique Dacosta Restaurante. He moved to Brisbane in 2019 to the executive chef role at highly regarded Middle Eastern restaurant Gerard's.
