Ben Williamson

Finding his way through restaurants across Perth, Sydney, Bahrain and Brisbane, Chef Ben Williamson is no stranger to travel and immersing himself in the cultural delights that inspire the culinary traditions and great cuisines of the world. Today, Williamson is one of the founding directors and executive chef of the Brisbane-based hospitality group, Anyday. Venues include; wood fire-driven restaurant Agnes, modern Italian trattoria Biànca, Japanese inspired hôntô and modern Thai restaurant sAme sAme. Ben continues to innovate and experiment with different flavours and techniques as he aims to bring his guests the best dining experience possible.

hôntô’s dark, moody space is tucked away in the gritty end of Fortitude Valley. hôntô is inspired by contemporary Japanese cuisine and dining culture. On the menu, you’ll find classic Japanese dishes with seasonal flourishes, always prioritising local ingredients.
