Executive Chef, Mark Axisa has honed his skills in the Catalina kitchen since 2001. Mark embodies a Modern Australian style, incorporating Mediterranean twists…a nod to his Maltese roots. Beginning his career as an apprentice at Catalina, Mark has refined and polished his craft; creating comforting and seasonal culinary experiences from locally sourced ingredients.
